What is Mazesoba?
Australia's first mazesoba restaurant is serving specialty ramen in Darling Square. Mazesoba 'まぜそば' is a brothless ramen that replaces soup with an umami soy based sauce. The literal translation of its name means 'mixed noodles', describing the way diners should mix the housemade wheat noodles, toppings and sauce prior to slurping.

"Located in Darling Square, it’s a great option when not feeling having yet another ramen. The menu offers different options of mazesoba (mixed noodles that are freshly made, no broth),and other Japanese food. Staff is friendly and food comes quickly, for a very good price. Really enjoyable!"
"What an excellent example of owning something and doing it well. The menu is not extensive but centred around mazesoba (mixed noodles) and it’s delicious!! We had the original and the secret one. 🤤 also got some uni on the side! Friendly staff, cute store. Will be back for more."
